MANUKA HONEY INFUSED BREAKFAST PARFAIT

Parfaits are quick, easy and simple for a delicious breakfast on the run. Layered with a simple strawberry and Manukora Manuka Honey 15+ infused blend and accompanied with the tart and smooth flavour of coconut yoghurt and fresh berries.

GLUTEN FREE | VEGETARIAN | DAIRY FREE

Serves 2

Parfait Layer Ingredients

1 cup coconut yoghurt

Handful blueberries

Handful raspberries

Strawberry Sauce Ingredients

300g strawberries, frozen

2 tbsp. Manukora Manuka Honey 15+

 Directions

  1. Starting on the strawberry sauce first, place a small saucepan on the stove on a low – medium heat.
  2. Place strawberries and Manukora Manuka Honey 15+ in the saucepan, stirring until well combined. Allow the mixture to simmer for five minutes.
  3. Once combined, place in the fridge for 15 minutes to cool.
  4. To create the parfait start with a glass jar and a dollop of coconut yoghurt, then add a dollop of raspberry sauce and continue the process until the jar is filled.
  5. Top with fresh berries and enjoy!

Storage Directions – For any left over strawberry sauce, place in an airtight jar and place in the refrigerator. Sauce will last up to seven days and make a great little jam on toast!

LOW CARB SEED BREAD WITH MANUKA HONEY

It is becoming more increasing that people are looking for lower carb options to regular bread. This bread is packed full of seeds and ground almonds and makes the perfect bread once topped with delicious peanut butter, fresh banana and Manukora Manuka Honey 15+.

GLUTEN FREE | VEGETARIAN | DAIRY FREE

 Serves 12

Seed Bread Ingredients

1 cup almond meal

1 cup pepitas

1 cup sunflower seeds

3/4 sesame seeds

Sprinkle paprika

1 tsp. salt

6 eggs

1 tbsp. Manukora Manuka Honey 15+

1 tbsp. coconut oil

Toppings

2 tbsp. peanut butter

½ sliced banana

1 tbsp. Manukora Manuka Honey

Directions

  1. Preheat the oven to 175°Cor 350°F.
  2. Prepare a loaf tin with baking paper or grease with butter.
  3. Place dry ingredients into a mixing bowl and mix until well combined.
  4. Place wet ingredients into a separate mixing bowl and mix until well combined.
  5. Mix dry and wet ingredients together and place mixture into prepared loaf tin.
  6. Bake for 40 minutes until well baked.
  7. Allow too stand for 15 minutes before thinly slicing. As this bread is quite dense try and slice bread too half a centimetre per slice.
  8. Top with peanut butter, sliced banana and drizzle with Manukora Manuka Honey 15+.
  9. Enjoy!

 

Storage Directions – Place in an airtight container and place in the pantry for up to four days. The bread will also do well frozen for up to three months, simply just toast to reuse again.

BREAKFAST PANCAKES AND MANUKA HONEY DRIZZLE

Pancakes on the weekends paired with a chai latte and great company makes breakfast the perfect time for the whole family. Stacked and drizzled with Manukora Manuka Honey 10+ with some sliced strawberries.

GLUTEN FREE | VEGETARIAN | DAIRY FREE OPTION

Serves 2

Ingredients

1 ½ cup almond meal

1 tsp. ground cinnamon

1 tsp. baking powder

3 eggs

1 tsp. vanilla extract

1 tbsp. Manukora Manuka Honey 10+

¼ cup skim milk or almond milk for a vegan alternative

Coconut oil or olive oil to grease the fry pan

Toppings

2 tbsp. Manukora Manuka Honey 10+ for extra drizzle

Handful strawberries, sliced

Directions

  1. Place all ingredients in a blender and process until smooth. (Blending almond meal in a recipe like pancakes will help break down the batter further, for a much smoother consistency!)
  2. Place a fry pan on the stove and heat to a medium temperature.
  3. Pour a small amount of batter onto the fry pan to test, cooking for 2-3 minutes per side.
  4. To test pancakes, simply cut in half. Check that it is thoroughly cooked through and continue the same process again until the batter is gone.
  5. Serve stacked with sliced strawberries and drizzle with Manukora Manuka Honey 10+.

Storage Directions – Place in an airtight container and place in the refrigerator. Pancakes will last up to two days. Warm in the oven to eat after refrigeration.

Manuka Honey infused baked pears are divine with a hint of cinnamon and coconut oil. Paired perfectly with the tartness of coconut yoghurt and drizzled with Manukora Manuka Honey 5+ makes the perfect breakfast or dessert.

Serves 1

Baked Pear Ingredients

1 pear, sliced

2 tbsp. Manukora Manuka Honey 5+

½ tsp. ground cinnamon

1 tbsp. coconut oil

Bowl Ingredients

½ cup coconut yoghurt or Greek yoghurt

2 tbsp. Manukora Manuka Honey 5+ for extra drizzle

2 tbsp. Manuka Honey Breakfast Granola (Recipe Here)

Directions

  1. Preheat the oven to 180°Cor 356°F.
  2. Prepare a baking tray with a sheet of foil large enough to wrap the pears in.
  3. Cut each pear in half and drizzle Manukora Manuka Honey 5+ and coconut oil on top.
  4. Sprinkle with cinnamon and close up the foil for baking. Bake pears for 30 minutes until soft and tender.
  5. Serve in a bowl with yoghurt of your choice, more Manukora Manuka Honey 5+ and some Manuka Honey Breakfast Granola.

Storage Directions – For any left over pear, place in an airtight container in the refrigerator. Pear will last up to five days.

This Manuka Honey infused Berry Crumble makes a great dessert treat for a special dinner party or just some weeknight delicious! Serve as is or with a side of vanilla ice cream.

Serves 6

Berry Ingredients

300g strawberries, diced

125g blueberries

2 tbsp. Manukora Manuka Honey 5+

2 tsp. vanilla extract

1 tsp. coconut oil

Crumble Ingredients

½ cup desiccated coconut

1 cup almond meal

½ cup macadamias, chopped

2 tbsp. Manukora Manuka Honey 5+

1 tbsp. coconut sugar

 

Cinnamon Sprinkle Topping

1 tsp. ground cinnamon

2 tbsp. coconut sugar

Directions

  1. Preheat the oven to 160°Cor 320°F.
  2. In a saucepan, simmer together the berry ingredients, stirring until well combined.
  3. To create the crumble, place all ingredients into a bowl and mix together. You may need you to use your hands for this to get an even crumble consistency.
  4. Add the berry ingredients into a regular sized baking dish and evenly top with the crumble mixture.
  5. In a mortar and pestle, ground the cinnamon sprinkle topping together and then evenly sprinkle over the crumble.
  6. Bake in the oven for 20 minutes.
  7. Once baked, serve on its own or together with vanilla ice cream.
  8. Enjoy!

Ingredients

1 lemon teabag

1 tsp. Manukora Manuka Honey 20+

½ tsp. ginger, grated

200ml boiling water

Directions

  1. Place teabag, Manukora Manuka Honey 20+ and grated ginger into a mug.
  2. Fill with boiling water and allow steeping for five minutes!
  3. Enjoy!

Tip – For an ice tea version, serve sold with plenty of ice in a glass! Delicious!

I don’t believe there is any better smell in the world than baking a fresh batch of banana and Manuka Honey muffins. These muffins are perfect served at breakfast or for dessert, topped with sliced strawberries and drizzled with Manukora Manuka Honey 5+ for a perfect snack.

Serves 12 small muffins or 6 large café style muffins

Ingredients

2 cups almond meal

2 bananas, mashed

3 tbsp. Manukora Manuka Honey 5+

2 tsp. baking powder

1 tsp. cinnamon

2 eggs

¼ cup coconut or Greek yoghurt

4 tbsp. skim milk or almond milk for a vegan alternative

2 tbsp. coconut oil or olive oil

Directions

  1. Preheat the oven to 160°Cor 320°F.
  2. Grease a muffin tray to ensure mixture won’t stick to the sides.
  3. Place dry ingredients into a mixing bowl and mix until well combined.
  4. Place wet ingredients into a mixing bowl and mix until well combined.
  5. Mix dry and wet ingredients together and place mixture into prepared muffin tray.
  6. Place in the oven for 20 – 30 minutes until cooked through. To check this, simply place a butter knife in the middle of the muffin. If it comes out clean it is ready. If not, pop muffins back in the oven for a few more minutes.
  7. Serve warm or wrap and take to work for a morning tea snack!

Storage Directions – Place in an airtight container, muffins will last up to four days.

1 tsp. chai blend (pre-bought chai tea powder from a health food store or supermarket)

Dash Boiling Water

  1. In a mug combine chai blend, Manukora Manuka Honey 20+ and boiling water together and mix well.
  2. Heat skim milk or almond milk in a small saucepan until boiling. Add to the mug and combine well with chai blend.

Who doesn’t love sweet and toasted homemade granola for breakfast? By adding Manukora Manuka Honey to your homemade granola it gives it such oomph! Served as a parfait on top of coconut or Greek yoghurt with blueberries.

GLUTEN FREE | VEGETARIAN | DAIRY FREE OPTION

Serves 6

Ingredients

¾ cup gluten free rolled oats

2 tbsp. coconut oil

2 tbsp. pepitas

½ cup unsalted whole macadamias

½ cup coconut sugar

2 tbsp. Manukora Manuka Honey 5+

½ tsp. ground cinnamon

 

Optional Ingredients

¼ cup toasted coconut chips

¼ cup dried cranberries or sultanas

Serving Ingredients

1/2 cup coconut or Greek yoghurt

¼ cup blueberries, frozen or fresh

Directions

  1. Preheat the oven to 160°Cor 320°F.
  2. Combine oats and coconut oil in a bowl, then spread evenly over a large baking tray.
  3. Bake for 10 minutes or until brown then remove from the oven.
  4. Returns oats to a mixing bowl, then add macadamias, pepitas, coconut sugar, Manukora Manuka Honey 5+ and cinnamon until the mixture is thoroughly coated.
  5. Return to the oven for a further 15 minutes to roast, stirring occasionally if needed.
  6. Once finished baking, allow the muesli to cool for at least 30 minutes.
  7. You can add any optional dry ingredients to the mix, after it is cool before sealing in a jar or airtight container.
  8. Serve as a breakfast parfait with fresh blueberries, yoghurt and topped with granola.
