Just as Manukora’s raw Mānuka honey is far more than honey alone, shaped by remote wilderness, careful stewardship, and a long chain of intentional choices, Immunity + Defense carries a similar story beneath its surface.
Though the blend appears simple at first glance, the formula reflects a series of deliberate botanical decisions, in which plant chemistry, preparation methods, and balance function as central design elements.
Why Elderberry and Echinacea
Immunity + Defense was built around a pairing of elderberry and echinacea, two botanicals with long histories in Western herbal practice and complementary ways of supporting the body’s natural defenses.
Elderberry has been used for thousands of years throughout Western Europe, where the elder tree holds a remarkably respected place in traditional medicine and folk practice. The berries were historically enjoyed in syrups, wines, and preserves. Hippocrates, often referred to as the father of medicine, famously called the elder tree his “medicine chest,” reflecting the plant’s versatile value.
Elderberry is particularly prized for its dense concentration of anthocyanins, the antioxidants responsible for the berries’ deep purple color. While anthocyanins are also found in fruits such as blueberries, elderberry contains a distinct profile dominated by cyanidin-based anthocyanins. These compounds are widely studied for their antioxidant properties and their role in supporting healthy cellular communication and immune signaling pathways, especially during periods of environmental and seasonal change.
Echinacea is a North American herb traditionally used by Indigenous communities long before being adopted by early American physicians and Western herbalists. We use Echinacea purpurea leaves and flowers. This aerial part of the plant is naturally rich in polysaccharides that help support the body’s normal immune defenses and has been studied in relation to immune cells such as macrophages and natural killer cells. The leaves and flowers are more well suited for rhythmic, longer-term use than the root, which is often chosen in traditional practice for shorter-term, acute support.
Together, elderberry and echinacea illustrate a classic botanical pairing: one contributing anthocyanin-rich compounds associated with antioxidant and cellular support, the other providing polysaccharide-rich constituents traditionally associated with immune responsiveness and resilience.
Concentration Without Compromise
Herbal extracts are not a modern shortcut. Across cultures, plants have long been infused, decocted, fermented, and concentrated to stabilize and refine their beneficial compounds. Problems arise, though, when modern extraction methods fail to respect plant chemistry and introduce harsh solvents, excessive processing, or unnecessary heat.
In Immunity + Defense, extraction is a primary design consideration. It is the mechanism that allows elderberry and echinacea to appear in meaningful amounts while maintaining a smooth and delicious sensory experience.
Our elderberry is gently water-extracted in the Italian Alps using processes designed to protect its sensitive anthocyanins. The extract is concentrated to a 64:1 ratio, meaning 64 pounds of dried elderberries yield one pound of extract. It’s standardized to 14% anthocyanins for consistency and verified potency.
Our echinacea is prepared with similar care. It’s extracted using a proprietary, water-only process inspired by traditional herbal decoctions. The extraction is done slowly in a closed system, which helps capture a broad spectrum of naturally occurring plant compounds.
Our Philosophy of Potency
Much like the honey that carries it, this blend reflects the belief that true potency is not created by adding more, but by refining what matters most. By treating each formulation and extraction decision as integral to the final composition, we have sought to preserve botanical integrity while creating a ritual that is both purposeful and deeply enjoyable.
When quality is respected at every step, simplicity becomes its own form of sophistication.
